Mandan Bride Flint Corn

Ingredients 

Dry ingredients

2 cups (264 g) fine ground Mandan Bride corn flour, (See Recipe Notes)

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

Wet ingredients

1 ½ cups (340 g) plain yogurt, at room temperature (can substitute an equal amount of buttermilk or half sour cream/half whole milk)

4 tablespoons (56 g) butter, melted and cooled ( can use bacon grease or lard, but butter is best)

1 large or extra large egg, at room temperature, beaten

4 tablespoons (84 g) honey

Instructions 

  • Preheat your oven to 375°F. Grease a 9 inch-deep pie dish, or 8-inch square baking pan or 9-inch cast iron skillet with butter or what you have and set it aside.
  • In a large bowl, place the cornmeal, baking powder, baking soda, and salt, and whisk to combine.
  • Create a well in the center of the dry ingredients, and add whipped wet ingredients, yogurt, butter, egg and honey, and mix to combine well.
  • Pour the mixture into the prepared baking pan or cast-iron pan. Place the pan in the center of the preheated oven and bake for 20 to 25 minutes, or until the cornbread is firm and a toothpick inserted in the center comes out clean.
  • If you’re baking in a cast iron pan, the cornbread will likely be done in about 20 minutes
  • Slice and serve warm.

Notes; This is not your normal Yellow Corn Bread ! More like a sweet cake, warm or cold delicious ! It is fine textured and sweet. Mandan Bride is a flint garden corn, Not a dent field corn. This is fine ground for flour not coarse meal. Those 4 heaping spoons of Honey make it sweet. And it is Gluten free!

Making Hominy;

ingredients; soak 1 quart of kernels in 1 1/2 quarts of spring water with about 4-7 tablespoons of hardwood ash lye, or 1 cup of hardwood ash, or 1/3 c. culinary lime/pickling lime. Cover corn with a solution of water and ash-lye in a large kettle, and boil until the husks are loosened. Pour off the lye water, and wash the corn thoroughly and clean out the husks, in clear water. Cover the corn with two gallons of water, and boil four hours until tender. Keep plenty of water on the corn, adding water when necessary during the boiling. The boiled hominy can be further prepared as a dish by seasoning it with butter or bacon drippings; or it can be fried in bacon drippings.

Last month I had a serious Gall Bladder attack and had it removed. As I am a Disabled Veteran emergency in a commercial hospital they gave me the works. Thank you uncle Sam. They put me through ever diagnostic machine that they had, some of them twice. With the Gall Bladder they removed a small liver polyp and discovered Metastatic Melanoma. All those scans discovered nothing else. and no known Melanomas found. Metastatic means it originated some where else. For the last 50 years I’ve had Basil cell Carcinomas removed. I think caused by being sprayed with molten metal in a electrical explosion in the Navy.

As I was playing with studying and growing Cannabis, I made a salve of a variety I liked in Coconut oil for skin treatment of my Carcinomas. A few applications and the Carcinomas vanished, melted, dried up and disappeared. Better then the efforts of skin Doctors. ( note: 10%, alcohol extracted resin from semi -mature buds added to 90% coconut oil )

In selecting a cannabis variety that fits your needs you must find one that it is “Cloying” to you. That is you like the smell and touch of it, Like some cats are cloyed by cat nip. It will have the right mix of Cannabinoids and terpines for your body’s requirements. Cannibas plants create 5 different Cannabinoids and their precursors as well as 10 different Terpines. These can help balance your own body’s production of Cannabinoids.

Everyone has had Cancer but generally a healthy body will recognize it and eradicate the growth as not self. But sometimes it escapes this immune protection and grows.

As I have several small jars of extracted Resins I decided to make cookies to ingest the needed resin. One grain per day rate. This is the Recipe I decided to work with to start. Yield 40 cookies using 2 grams resin. To be taken at bed time. 40 cookies is about 1/3 of needed treatment. 120 days.

take 2 sticks butter ( 1/2 pound ) melt in pan and mix in 2 grams resin plus 2 ounces alcohol to aid in dissolving resin into warm butter. This will take a while, 15-20 minuets of mixing, take your time, it will fully mix. Once you are sure that the Resin is completely dissolved add 2 cups sugar, mix well and chill. To make good cookies, you will need to whip sugar-butter mix, then add 3 large Eggs, 2 tablespoons vanilla, and 1 teaspoon colorant. then spoon in Dry ingredients. I use green color to denote NOT desert cookies.

Dry ingredients: 6 cups flour, 1 heaping teaspoon baking powder, 1/2 heaping teaspoon salt, heaping as in more then level but not OMG over fill! LOL. After mixing well, put in refrigerator for a couple of hours to well chill dough. Heat oven to 350F.

Remove from Refrigerator and divide in two equal halves. return half to refrigerator, divide half into 4 parts, roll each into 1-1/4″ log and divide each into 5 pieces, roll into balls, place each onto cool cooky sheet and press to 1/4 inch thick. cook 11 to 12 minutes at 350F. will rise to about 1/2 inch thick, DONE ! let cool to warm before removing from cooky sheet. Repeat for second half from refrigerator. Yield 40 cookies at one grain per each.
